creamy butternut bisque

creamy butternut bisque
3 tablespoons butter
1 med. onion chopped fine
4 cups butternut squash, peeled, seeded, and cubed
2 cups potato, peeled and cubed
5 cups chicken broth
1 teaspoon paprika
1/2 cup heavy cream
freshly ground pepper and salt to taste
chopped fresh chives, to garnish





melt the butter in a large sauce pan and add onions, cook until soft. add the squash, potatoes, chicken broth, and paprika. simmer until vegetables are soft, about half an hour. puree' soup in a food processor and return to the pot. stir in the cream and reheat gently. garnish with chives. enjoy!
